If you’re like me, the prospect of no pancakes for breakfast is too much to bear, even though I’m totally committed to my healthy weight loss plan.  Fear not, I have found the solution – it comes in the form of this nutritious and delicious healthy pancake recipe.  It’s loaded with large amounts of lean protein and a small amount of low GI carbs in the form of oatmeal, so will have you burning fat in no time.

Preparation for this recipe is simple and fast.  2-4 minutes at the most.

For one serving, here are the ingredients:

1/2 cup of cottage cheese (regular or low fat – either has very little fat in it!)

3 egg whites and 1 whole egg

1/2 cup of oatmeal

1/2 tsp vanilla

1/2 tsp cinnamon to taste

sprinkle of frozen blue berries (optional)

sugar free syrup for topping (optional)


  1. Blend all ingredients together (Except for blue berries and syrup), either in a blender or food processor
  2. If you are going to add blue berries, do this once you’ve blended the first five ingredients and give them a quick blip, just to mix them through and not chop them up (if they’re frozen this should be fine – if they’re fresh, mix them in by hand)
  3. Cover the bottom of your skillet with cooking spray and cook the same way you would “silver dollar pancakes” – a few small ones at a time on a medium heat.
Note:  Go easy on the syrup.  Even though it’s sugar free, research indicates that artificial sweeteners can sabotage your weight loss efforts.  There should be enough flavor and sweetness from the blueberries.  Enjoy and feel free to post comments if you like this recipe or if you have any variations on the theme.  Add this to your list of healthy weight loss foods and enjoy.
